Food hygiene risks in meat and fish processing establishments

This project was a joint pilot project of Evira's Risk Assessment Unit and Meat and Fish Hygiene Unit. The project charted possible food hygiene risks that can be hazardous to consumers' health in meat and fish farming establishments and also evaluated the significance of such risks.

The goal of the study was to develop a tool which allows the food inspectors to classify fish and meat processing establishments according to the products delivered and the risks they may pose to the consumer.
