Based on EFSA’s risk assessment, the European Commission has identified the need for risk management measures in order to mitigate acrylamide levels in foods. Commission Regulation EU 2017/2158 lays down mandatory mitigation measures to be applied by food businesses in their in-house control to lower levels of acrylamide. The monitoring (sampling and analysis) of acrylamide levels is also mandatory for some of the operators. The Regulation has been applied since 11 April 2018.
The Regulation is binding and directly applicable in all Member States. The Regulation applies to food business operators which produce and place on the market foodstuffs that fall within the scope of the Regulation. Such foodstuffs include foods which contain starch and are heated as part of their manufacturing process. Finnish Food Authority has prepared a Guideline for the interpretation of the application of the Regulation. It is availabe in Finnish and in Swedish.
